Why is your restaurant called « 140 Degrés »?
It's the secret of a true Belgian fry! The name 140 Degrés refers to the exact temperature of the first cooking bath for our fries. This first low-temperature cook is what makes the potato soft on the inside, before a second high-temperature bath gives it its unmistakable crispiness.
Do you serve real traditional Belgian fries?
Yes, absolutely. We honour the craft of the traditional Belgian fritkot (an authentic friterie or « baraque à frites »). Our potatoes are fresh, carefully selected, cut on site and cooked using the traditional double-fry method.
Are your fries cooked in beef fat or vegetable oil?
True to Belgian tradition, our authentic fries are cooked in beef dripping (blanc de bœuf). We use a unique double-cooking method for the perfect crunch:
First bath: the fries are first poached at low temperature (140°C) in beef fat, giving them their authentic taste and an incredibly soft centre.
Second bath: they are then seared at high temperature in quality vegetable oil for a final ultra-crispy, light and golden texture.
Are your meats and cooking fat Halal, and where do your products come from?
Absolutely. At 140 Degrés, quality and traceability are essential to us:
Halal certification: all of our meats, as well as our beef fat (blanc de bœuf), are Halal-certified.
Short supply chains: all our ingredients are selected with the greatest care and come from short supply chains to guarantee freshness and quality on your plate.
Which sauces are available with the fries?
We offer a wide selection of sauces, from the great classics to Belgian street-food staples: Andalouse, Samouraï, Algérienne, homemade mayonnaise, ketchup and many more.
Can I eat in, or do you offer takeaway?
We offer both! You can grab your cornet of fries to take away and enjoy while strolling around the Sentier neighbourhood, or settle in at our cosy space for a quick, friendly meal.
Do you accept cash payments?
For reasons of security, efficiency and hygiene at the counter, our establishment does not accept cash payments. Orders can only be paid by bank card. Thank you for your understanding.
